Feasting with FARE: Cauliflower and Mushroom Tacos

Ingredients

  • 2 cloves of garlic, chopped
  • 1/4 cup diced onion
  • 4 oz. mushrooms, quartered
  • 1/4 cup sun-dried tomatoes (dry
  • 1/4 cup unsalted sunflower seeds
  • 1/4 cup raw pumpkin seeds
  • 1 cup rice cauliflower
  • 1 1/2 tsp fresh lime juice
  • 1 tsp olive oil
  • 1 tsp chili powder
  • A pinch of cayenne
  • Avocado Aioli
    • 1 ripe avocado
    • 1/2 cup soy free vegan mayonnaise
    • Juice of one lime
    • 1 jalapeno
    • Salt to taste

Instructions

  1. Combine all the ingredients (minus the Avocado Aioli) in your food processor and pulse until it reaches a crumbly texture. Transfer to a frying pan on medium heat and cook 5-10 minutes until crispy.
  2. Place all Aoli ingredients in a blender and blend till smooth.
  3. Build your tacos and enjoy!
