Feasting with FARE: Cauliflower and Mushroom Tacos

Ingredients
- 2 cloves of garlic, chopped
- 1/4 cup diced onion
- 4 oz. mushrooms, quartered
- 1/4 cup sun-dried tomatoes (dry
- 1/4 cup unsalted sunflower seeds
- 1/4 cup raw pumpkin seeds
- 1 cup rice cauliflower
- 1 1/2 tsp fresh lime juice
- 1 tsp olive oil
- 1 tsp chili powder
- A pinch of cayenne
- Avocado Aioli
- 1 ripe avocado
- 1/2 cup soy free vegan mayonnaise
- Juice of one lime
- 1 jalapeno
- Salt to taste
Instructions
- Combine all the ingredients (minus the Avocado Aioli) in your food processor and pulse until it reaches a crumbly texture. Transfer to a frying pan on medium heat and cook 5-10 minutes until crispy.
- Place all Aoli ingredients in a blender and blend till smooth.
- Build your tacos and enjoy!
