Feasting With FARE: Pupusas and Salsa Roja

Ingredients
Pupusas
- 2 cups masa
- 1 ¾ cups water
- 1 tsp. salt
Filling
- Vegan cheddar cheese
- Caramelized onion
- Refried beans
Salsa Roja
- 3 garlic cloves
- ½ medium yellow onion
- 1 jalapeno
- 1 tbsp. olive or avocado oil
- 1 14.5oz can of tomatoes
- ½ cup vegetable broth
- 1 tsp. dried oregano
- 1 tsp. cumin
- 1 tsp. chili powder
- ¼ tsp. salt
Instructions
Salsa Roja
- Place all of the ingredients in a blender and blend until smooth.
- Place salsa in a small pot and bring to a boil. Reduce to a simmer and let reduce down, uncovered for 15 minutes stirring frequently.
- Set aside.
Pupusas
- In a large bowl, whisk together the masa harina and salt, then add the water. Use your hands to mix until the dough comes together. Divide the dough into 8 pieces and roll into balls.
- To form, flatten a ball into a round circle using your hands. Place a dollop of filling in the center and fold the sides in to close. Roll into a ball again and flatten in between your hands.
- Heat a skillet to medium heat and spray with cooking oil.
- Place 2-3 pupusas on the pan and cook for 2-4 minutes, or until the bottoms are golden brown. Flip and cook on the other side for 2-4 minutes more, until golden brown and warmed through. Repeat with the remaining pupusas.
- Serve with the salsa roja.
