Feasting With FARE: Horchata

Priscilla Hernandez and her family are back in Zacky’s Kitchen with another traditional favorite. This time, they’re making a versatile allergen-friendly horchata, the perfect beverage to beat the summer heat!

Ingredients

  • 2 cups of long grain rice
  • 4-5 cups of water
  • ½ cup of white sugar
  • 2 cinnamon stick
  • 2- cups of oat milk
  • 1 cup of sweetened condensed oat milk
  • 1 teaspoon of vanilla extract

(Oat milk can easily be substituted with coconut milk/coconut condensed milk and still taste great)

Instructions

  1. Combine 2 cups of rice with 4 cups of water (remember to clean rice first)
  2. Add 2 cinnamon sticks
  3. Add ½ cup sugar
  4. Leave overnight (24 hours is ideal) in fridge
  5. Put in blender with oat milk
  6. Blend all contents to a smooth consistency
  7. Strain contents into bowl or container
  8. Add a cup of condensed oat milk
  9. Add ½ tablespoon of vanilla extract
  10. Add more water as needed
  11. Stir together 
  12. Serve over ice cold or heat up
  13. Enjoy!
