- Easter Bunnies

1/4 cup milk-free, soy-free margarine
1 package marshmallows
6 cups crisp rice cereal
shredded coconut
pink construction paper
black construction paper
honey
In large pan over low heat, melt margarine. Add marshmallows and stir until completely melted. Remove from heat, add crisp rice cereal. Stir well making sure mixture is well coated. Shape approximately 3 cups of mixture into ball to form body of bunny. Shape approximately 2 cups of mixture into ball to form the head. Form the remaining cup of mixture into ball to make tail. Roll tail in shredded coconut to give Easter bunny “cotton tail.” Attach head and tail to body with toothpicks. Cut ears from pink construction paper and gently push them into head, using toothpicks to anchor. Cut whiskers from black construction paper, dip ends in honey, and attach to face.
Note: Be sure to remove the toothpicks and construction paper before eating the bunny.
Suggestion: Use this recipe to create baskets that you can fill with small allowed candies.

Clove Buttons

1 cup flour
1 tsp. ground cloves
1 cup sugar
1/2 cup shortening
1 1/2 T. water, 1 1/2 T. oil, 1 tsp. baking powder; mixed together
1 tsp. vanilla extract
Preheat oven to 325 degrees. Lightly grease 2 cookie sheets, or line with parchment paper. Set aside. In small bowl, combine flour and cloves. Set aside. In large bowl, combine sugar and shortening. Add water, oil, and baking powder mixture; and vanilla extract. Add to dry ingredients and mix well. Drop dough by spoonfuls 2 inches apart onto prepared cookie sheets. Bake 12 to 15 minutes. Transfer to wire racks to cool. Frost if desired.

Clove Frosting

1 cup confectioners sugar
1 T. milk-free, soy-free margarine, softened
dash ground cloves
3 1/2 tsp. water
In small bowl, combine all ingredients and stir until smooth. If necessary, add more water by the teaspoonful to reach desired spreading consistency.
